Well for those who just fancy having their own Independent or Semi-Independent Empire.. Why not consider usurping rule of one of the following regions. I've selected here small regions you could take over without being a massive Core Power. Some of them would just need a few thugs. Some would need skills or talents. Some would need cash down or soldiers..

All for the for the taking for he who lusts for power!

Ottethan Empire
Notes: A blank slate of 12 systems (probably mostly primitive), I would guess your averagely successful Pirate Commodore with a few ships could come in and become King.
Difficulty rating: Pretty Easy

Kobothi Space
Notes: Totally blank slate and hard to attack thanks to black holes. Two named systems and almost in-navigable hyperlanes.
Difficulty rating: Easy, if you have a good navigator

Epsi Collective
Notes: Expansion region so making your coup more at risk from Republic intervention than the Outer Rim, has Vandelhelm which is known for shipwrighting and making excelltn quality alloys.
Difficulty: Medium, since you have to take over and turn a relatively disunited collective into a coherent polity if you want it to be useful (difficult) and also a lot of different aliens to deal with.

Cyrillian Protectorate
Notes: Expansion region (and possibly a direct Republic protectorate - or maybe its just the name they picked for themselves, theres no evidence either way) which risks Republic interest, civilized, alien run, plenty of industry.

Induparan Crown Worlds
Notes: Petty kingdom anyone could usurp with a contrived claim, an assassin's knife and bribing the palace guard you could be king overnight.
Difficulty: Easy if you have cash or forces

Stenness Node
Notes: Mining regions, civilized worlds, one world the mandos slaughtered everyone on but could be resettled. No organized Government so any tough could come in and take over. Also controls a big hyperspace hub for mining ships (I presume it could build in its docks) and a Heavily modified Core Galaxy Systems Dreadnaught made into a space station.

Difficulty: Medium, the key to the kingdom is the Mining hub (a giant space station/dock/hab with over 1000 levels which seems to serve as de-facto capital). Pirates operating out of the region could either be brought onboard your takeover or might be an issue that you could use to unite the locals under your rule. The area has over 20 species and while the worlds are in close association there's no political union in official terms, they just peacefully share the Hub. Bending these species to your will might be hard or it might be easy, but you would need to have military forces so the option of ruling by terror is there.

Special caution: Some of the aliens you will have to dominate, the Amarans, these are basically just fox furries so use caution to avoid an unwanted "yiff" as I believe the term is known.

Givin Domain
Notes:Only one system named System which is militarily significant, economically significant and wealthy. Yag'Dhul is a Mathematocracy, according to Wookieepedia more correctly called a Technocracy. Basically if you are the god of math (maybe a particularly talented Muun would have a shot) by demonstrating your numerical powers to their Council and being proclaimed leader. Could just mind trick them to think you are good at the maths too.
Ease: Medium/Easy needs finesse and not military force

Desevro
For an alternative to an autonomous region. Why not a powerful autonomous world? This one is fiercely independent of Republic influence, violently humanocentric it is a world which has plenty of industrial capacity, exporting a lot of Manufactured Goods. Has a possibly abandoned (but repairable) spaceport. A perfect world to be an Independent Militarist Faction.
Difficulty: If you can evoke a really violent Tionese ethnic identity tied to militarism (pretty much to be Tionese means to want to fight the Hutts) in the population they'd probably depose the Oligarchy who seem to prefer co-existence and trade. Difficult to conquer as an outsider, but as a Tionese (or someone who claimed to be Tionese person with a good background and the right politics, they could get the planet through a popular uprising.
